In China, green tea has been highly valued for centuries as a healthy and vitalising drink. Especially the cultivation areas of Anhui, Zhejiang and Fujian produce intense teas with a fine, tart note that often seem unusual to the Western palate. The taste and effect of green tea vary depending on how it is prepared. Green gunpowder tea, for example, consists of tea leaves rolled into balls that release a lot of tein and a strong, exquisite flavour when brewed properly.
