Chai (tea) is India’s national drink. Whether at the market, on the train, or in a restaurant—chai is available everywhere, all the time. Masala chai is particularly popular. The selected spices are simmered in water for a long time and then combined with milk, black tea, and sugar.
Bring 2 teaspoons of chai spice blend and 4 teaspoons of (coconut blossom) sugar to a boil with 400 ml of water, then let steep for 10 minutes; add 3 teaspoons of black tea and 250 ml of milk, and bring to a boil again briefly.
