aufwändig angebaut und sorgfältig verarbeitet. Ihr vielschichtiges Aroma
ist eine Komposition aus ca. 170 Aromen.
Anbau, Ernte und Verarbeitung von Gourmet-Vanille sind aufwändig: Jede Blüte muss von Hand bestäubt werden, die Bestimmung des richtigen
Erntezeitpunktes der Vanilleschoten erfordert viel Erfahrung und ist entscheidend für deren Qualität. Die zur Ernte anstehenden Früchte müssen täglich kontrolliert und gegebenenfalls gepflückt werden, weil die Schoten einer Pflanze nie gleichzeitig reifen. Die Ernteperiode zieht sich deshalb über drei Monate hin. Mithilfe von Wärme und Fermentationsprozessen werden die Aromastoffe freigesetzt. Die Früchte müssen wochenlang bei sachgemäßer Lagerung reifen, bevor sie ihr charakteristisches Aroma bekommen.
